Born in Tavistock, Devon, Cornick is a product of the AFC Bournemouth academy and has had successful loan spells at Portsmouth, Yeovil Town, Cheltenham Town, and Swindon Town.

Cornick made his professional debut for Bournemouth in 2011 and went on to make over 100 appearances for the club, scoring 25 goals. He helped the Cherries gain promotion to the Premier League in 2015, but he was unable to cement a regular place in the team. In 2017, he joined Portsmouth on loan, where he scored 10 goals in 22 appearances. This impressive form earned him a permanent move to Portsmouth in 2018.

Cornick continued his goalscoring form at Portsmouth, scoring 31 goals in 73 appearances. He helped Pompey win the EFL Trophy in 2019, but he was unable to help them gain promotion to the Championship. In 2021, he joined Exeter City on a free transfer.
